Pistachios that come from the Greek island of Aegina are considered one of the best varieties of pistachios in the world.
They are smaller and their skin is red unlike other pistachios. The unique flavour and colour of Aegina pistachios goes perfectly with Mediterranean cuisine. Try them with a pesto sauce, green salad, fruit salad, chocolate, biscuits... or just as an aperitif !
Aegina pistachios come from pistachio trees sown more than a century ago and are harvested by hand towards the end of August, when their maturity is reached, then dried for 3-4 days in the sun, so to give them even more flavour.
