Roasted and salted pistachios from Aegina
Excellent as an aperitif and still little known in France, the pistachios of the greek island of Aegina have an incomparable flavor and are considered to be one of the best variety of pistachios, if not the best! Smaller, the Aegina pistachios are made from pistachios sown more than a century ago and are harvested by hand at the end of August, when they are mature, then dried for 3-4 days in the sun, to give them even more taste.
