Olive oil infused with Chios mastic

Several times Greek chefs have infused olive oils which they use in different sorts of dishes. This olive oil infused with Chios mastiha is an exemple of that practice. It can be used in many and different recipes because of its subtle flavour.

This recipe comes from the Chios Gum Mastic Growers Association.

  • 1 glass bottle

In a nonstick skillet over low heat heat 80 ml of extra virgin olive oil and the Chios mastiha Tears.

Pour the olive oil with mastiha into a glass bottle and let it cool.

When it is cooled, you can add the remaining olive oil in the bottle.

You can use it immediately or store it in a cool, dark place like all the olive oils.

You should shake the bottle before using.
