Kefalograviera is a Greek cheese with Protected Designation of Origin (PDO) which is similar to Kefalotyri.
It is a salty, hard, light rind cheese that is produced from sheep's milk or a mixture of sheep's and goat's milk.
Kefalograviera is a cheese used grated for pasta, such as hilopites in tomato sauce, giouvetsi or even kritharoto, or raw for your appetizers and salads. It is often used to prepare the recipe for saganaki, the famous fried cheese mezze!
