Fakes, lentil soup

Fakes, the lentil soup is a traditional greek dish that is eaten during the winter ! A vegan dish and with lots of vitamins which will boost your energy !

Ingredients

  • 500 g lentils
  • ½ cup olive oil
  • 2 onions, finely chopped
  • 2 small leeks, tenderly chopped
  • 2 chopped garlic cloves
  • 2 finely chopped carrots
  • 2 moderately chopped tomatoes (or tomato sauce)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • a little vinegar
  • salt
  • pepper

Making

Rinse the lentils and boil them with plenty of water for 5 minutes and drain. Wash the tomatoes and cut them moderately chopped. Otherwise, you can replace them with tomato sauce.

Heat 3 or 4 tablespoons of olive oil and fry the onion and leek for 3 minutes.

Add the garlic and carrot and mix to grease. Add the tomato paste and mix well.

Add the lentils, tomatoes, bay leaf and hot water to cover the ingredients.

Put the lid on and boil for about 25 minutes over low heat to have a rather creamy mixture. Add salt and pepper at the end and add the rest of the 1/2 cup olive oil slowly, stirring with a wooden spoon over low heat to turn the lentils.

Finally, add 2 tablespoons of vinegar. Add and try the salt and pepper.

Serve with feta cheese, Kalamata olives and bread oven toast.
