Diples are the Greek knots of end of year celebrations. They are with the melomakarona and the kourabiedes the traditional Christmas cookies !
Ingredients
- 4 egg yolks
- 4 tablespoons sugar
- 2 tablespoons melted butter
- grated zest of 1 small orange
- 2.5 cups flour
- pinch of salt
- olive oil for frying
- honey
- chopped walnuts
- cinnamon
- 4 tablespoons Metaxa cognac
Utensils
- 1 hand or stand mixer
- 1 flour sieve
- 1 frying pan
Making
Beat the eggs and egg yolks in a foam, whisk in the water, the butter, the orange zest and the cognac.
Sift 2 cups of flour with the salt, pour stirring into the eggs and work in firm dough. Continue to work on a floured board until the dough becomes smooth.
Roll out the dough until it is fine, cut with a roller into long strips about 2.5 cm wide and form knots.
You can also cut the dough into 5cm squares.
Fry them until golden. Little advice: don’t put too much at once!
Dry on a paper, place on a dish, sprinkle with hot honey , chopped nuts and cinnamon.
The recipe is for about 20 diples.
