Trahanas with tomato, onions and mushrooms

Trahanas are pasta with a unique taste that originated in the confines of the Byzantine Empire, made from milk and / or yogurt to which we will add crushed wheat. All will be cooked and then dried naturally in the sun until the dough becomes hard, and finally reduced to crumbs of similar size to the bulgur.

Ingredients

  • 1 cup of trahana
  • 5 cups water
  • 2 cups diced tomatoes
  • 1 finely cut onion
  • 500 g mushrooms
  • 1 garlic clove
  • 1 beef broth
  • olive oil
  • thyme
  • salt
  • pepper

Wash the tomatoes and dice them.Cut the white mushrooms into eight pieces, the onion in small cubes and the garlic in 3 or 4 pieces.

Tip

In case that you replace the tomatoes with tomato sauce, you should add a little bit of sugar.

Pour 2-3 tablespoon of olive oil in a large saucepan over medium heat and put onion and garlic. Leave and mix for about 3 minutes. Add the thyme.

Add the mushrooms to the pan and mix. Leave no more than 10 minutes. It must not stay mushroom water in the pan.

Add water, tomatoes, trahana, salt, pepper and beef broth.

Lower the heat and mix often. Normally it takes about 20 min maximum. Salt and pepper if necessary. Serve with a piece of bread.
