Eggs with tomatoes is a super simple dish for lunch or brunch with family or friends at home! The result will surprise you !
Ingredients
- ½ cup olive oil
- 1 medium onion diced
- 680 g peeled tomatoes, sliced
- 1 tablespoon sugar
- 6 whole or beaten eggs
- salt
- pepper
- parsley (optional)
Utensils
- 1 frying pan
Making
Heat the olive oil in a large pan and cook the onion.
Then add the tomatoes and season (salt, pepper and sugar). Let it simmer for about 20 minutes or until the tomatoes are cooked.
Break the eggs over or add the beaten eggs. Cover and cook another 3-4 minutes.
In the end you can add a little parsley!
Serve with sesame breadsticks or mini rusks with barley!
