White bean soup is a healthy, vegan dish with lots of vitamins! It is a dish that is suggested especially for winter days.
- 500 g white beans
- 1 cup tomatoes cut into cubes or in a can
- 2 chopped onions
- ½ cup chopped celery leaves
- 3 carrots cut into cubes
- ½ cup olive oil
- 2 sprigs of chopped parsley
- 8 cups cold water
- 1 cooking pot
Wash the beans, cover them with cold water and let them soak for one night.
The next day, drain them and put them in a pot with 8 cups of cold water. Bring to a boil, then reduce the heat and simmer for about 20 minutes.
Add the tomatoes, celery, carrots, onions, olive oil and parsley and cook on low heat for 20 minutes or until the beans are tender.
