OLIVE OIL - GENERALLY

The olive-green fruit of the olive tree, with its presence, has marked the entire Mediterranean landscape while an entire culture has been erected on and around it that magically connects all the cultures that developed in the Mediterranean.

Symbol of peace and prize winner at the Olympics, Athena's divine gift with the founding of the city of Athens, the presence of the olive tree goes hand in hand with the course of many Mediterranean peoples and cultures, influencing the customs, traditions , even the religious worship of all the peoples associated with it. The cultivation of the olive tree was favored by the appropriate climate in the Mediterranean basin.

Thousands of years old fossilized olive leaves have been found in many areas throughout the Mediterranean and, of course, in Greece where in addition to fruit and fossilized leaves, traces of olive oil have been found in Mycenaean vases.

In addition to Greece, Italy and Spain, olive is systematically cultivated in southern France, Asia Minor, Lebanon, Syria, Palestine, Cyprus, Morocco and Tunisia.

TYPES OF OLIVE OIL

Every region of Greece produces olive oil with a special taste, aroma and color, characteristics that are directly dependent on the variety of the olive, the soil, the altitude and the climatic conditions in the region.

Extra virgin olive oil has a 1% acidity and is ideal for raw use and consumption.

Virgin olive oil has slightly higher acidity (1.1-2%) and is of excellent quality, suitable for cooking.

Organic Olive Oil comes from crops with no chemicals, pesticides and fertilizers, while certified certification bodies regularly monitor crops and the end product.

Cold pressed olive oil or unleavened olive oil is produced by pressing olives using a low kneading temperature (up to 27 ° C) and is a perfectly natural fruit juice and of very high quality.

Olive oil has such unique tasty, aromatic, nutritious and biological properties that make it an excellent and irreplaceable food.
